Chapter One

Mickael Viljanen is a celebrity in the foodie universe. The Chef-Patron of the multi-award-winning Chapter One restaurant in Dublin and one of only few chefs in Ireland to be awarded two Michelin stars, is celebrated for his sublime craft, technical precision and masterful manipulation of flavours.

Born in Stockholm, Sweden but was raised in Finland, working in kitchens since he was 14, Mickael moved to Ireland in 2000, where he grew up via France and the United Kingdom. He first worked with Paul Flynn at The Tannery in Dunngarvan, renowned for its modern Irish menu. Then, after a five-year stint as head chef at Gregans Castle in Count Clare, he moved to open The Greenhouse in 2012. In 2019 the restaurant got promoted to 2 stars under his leadership.

With his name already in the lights, Mickael decided it was time to move on and work for himself. And in 2021, he took on the role of Chef-Patron at the iconic Chapter One that has been awarded a Michelin star since 2007, among many other awards. Here too, his cooking focuses on prime ingredients and uses classic French techniques to create dishes that offer bold and sometimes quite daring flavour combinations.

Cooking focuses on prime luxury ingredients; Irish where possible but sourced from further afield when needed to ensure the best quality. Mickael uses classical French techniques combined with a subtle modernity as well as plenty of creativity and personality. Sophisticated, beautifully presented dishes are perfectly balanced, with striking natural flavours.
