A Casa do Porco
Janaína Torres Rueda, born and raised in the center of São Paulo is the chef at Casa do Porco Bar and Hot Pork together with her husband Jefferson. Her first experience has been in Bar da Dona Onça, opened in 2008 in the Copan building, which was the forerunner of the area’s reclamation movement.
From 2015 to 2019, at the invitation of the Government of the State of São Paulo, you worked on the development of the project “Cozinheiros pela Educação” to replace processed and industrialized products in-state school canteens with natural ingredients.
Jefferson Rueda, born in São José do Rio Pardo, husband of Janaína Rueda and father of João Pedro and Joaquim. Consultant at Bar da Dona Onça, chef at Casa do Porco Bar and Hot Pork, and owner-chef at Sorveteria do Centro. His first job was as a butcher at the age of 17, a kick-start for him to continue in the world of gastronomy.
Jefferson attended Senac’s first gastronomy class in Brazil and interned at renowned restaurants in Europe, such as El Celler de Can Roca. Today, with a solid career of more than 20 years, he accumulates national and international awards.
In 2015, chefs Janaína and Jefferson Rueda took a new flight and decided to unite their years of career with their passions in one place: A Casa do Porco.
To honor the region where chef Janaína Rueda was born, they decided to open the restaurant in the center of São Paulo with the intention of creating a democratic space, where everyone is welcome, offering the public haute cuisine at affordable prices, making the house a great success from day one.
Casa do Porco is a restaurant where pork is the protagonist. Represented in different shapes and textures, no part is wasted, it is the animal from nose to tail.
Pork has been part of the chef’s life since his childhood in São José do Rio Pardo, and has become an object of research and dedication.
Accompanying the entire production chain, from the producer, the slaughter, the butcher shop, to reaching the table, Janaína and Jefferson have been debating myths and truths about pork meat and breaking prejudices, challenging many customers who enter the restaurant and leave fascinated.
In partnership with artists from downtown São Paulo, Casa do Porco has been transforming the neighborhood, helping to make it a center of creativity, tourism, leisure and culture. Today is considered one of the best restaurants in Latin America.
Janina and Jefferson’s mission is also the transformation of popular food habits and customs in Brazil. Their dreams of leaving a legacy of rescuing the culture of pork and, through his work with artisanal products, seek to raise awareness of quality food and rescue the cultural value of food, its roots.
