Max Natmessnig had his first taste of top-class cuisine at the age of eight when he visited an awarded fine dining restaurant with his father. It made such a strong impression that he decided to become a top chef.
After attending a school of tourism in Vienna, he gained his first experience with an internship at “L’Auberge de L’Ile de Barbe” in Lyon. This was followed by posts at Heinz Reitbauer’s “Steirereck” in Vienna; “Oud Sluis” with Sergio Herman in the Netherlands; and then across the pond at “Nomad” with Daniel Humm in New York. Next, he went to César Ramirez’s “Chef’s Table at Brooklyn Fare”.
In 2017, he returned to Austria, taking up the post of Executive Chef at the “Rote Wand” in Arlberg. The restaurant received several awards under his management.
Max Natmessnig has been the Executive Chef at Alois since October 2022.
A perfect role for him and suits him to a tee. Here, he can pursue what he loves: “working with fantastic products”. What’s more, he also looks forward to walks in Munich’s English Garden with his wife Rebekah and his truffle dog Rhia.

“Restaurant Alois is located on the first floor of the Dallmayr delicatessen – in the very heart of Munich, just behind Marienplatz. The restaurant is named after our former owner Alois Dallmayr, who also gave our company group its name.
Dallmayr has centuries of experience working with the finest food, drink, and delicacies. This work continues to fulfill us, day after day.
