Mario Sandoval – New Candidates 2023

Mario Sandoval

He began to fall in love with cooking and its secrets at the age of 10 in the family restaurant, thus ushering in a third generation of chefs in the Sandoval family.

There, day by day, he learned the basic techniques of a trade that he later built upon and perfected in the Superior School of Hotel Management of Madrid and different specialized courses and “stages” in Madrid, Catalonia, and France. In 1999 he took over the business of running Coque from his father, together with his brothers.

At present, along with his work as a head chef of the restaurant, Mario is dedicated to his work as an entrepreneur, coordinating integrated restaurant services and acting as a strategic food services consultant for various companies. He is also a speaker at the largest culinary conferences, and a researcher of new food service-related techniques and technologies, endeavors that place him in the midst of the most vibrant Spanish culinary vanguard.

Coque: the culinary journey.

“Your arrival at Coque is the beginning of the culinary journey with four stops along with way, each with a distinct focus in terms of flavor and innovation. A journey in which you use all your senses, including those you didn’t think of. You’ll need to not only smell and taste, but also touch, feel, imagine and even recreate flavors that you may never have tried before.”

After more than 40 years and three generations in the same building located in Humanes de Madrid, the old Sandoval family restaurant has continued to grow by taking a step forward and emerging on a new scene. Coque has now opened its doors in the heart of Madrid, in a space of 1,100m2 where hopes, dreams and mutual respect are the order of the day. Mario, Rafael and Diego Sandoval, third-generation restaurateurs, have imagined their ideal space into being, each applying his own signature touch, led by designer Jean Porsche.
