Chef Aitor Arregi is the guardian of Elkano in Getaria, Spain, a family restaurant founded by his parents Pedro and Mari José and today considered one of the great ambassadors of Basque coastal cuisine.
After an early career in professional football, he returned to the restaurant in 2002 to preserve and elevate his father’s legacy, shaping a culinary philosophy rooted in fire, the sea, and deep respect for local artisans and fishermen.
At Elkano, Arregi is known for transforming simplicity into depth, using open-flame grilling to highlight the purity of each ingredient. His approach is guided by conversation with producers, an understanding of nature’s rhythms, and a belief that tradition can be the strongest form of innovation.
In recognition of his contribution to Basque gastronomy and cultural heritage, Arregi was appointed International Ambassador of the Añana Salt Valley in 2025. He also serves on the Patronato of the Basque Culinary Center, where he shares his vision for a cuisine that honors history while looking toward the future.
