Born in Porirua, New Zealand, Alan discovered his passion for cooking at the age of 14 while working in a local café. His journey into fine dining began at Maze by Gordon Ramsay in Melbourne under Chef Josh Emmett. At just 20, he moved to London, where he met his future mentor, Clare Smyth, at Restaurant Gordon Ramsay.

Alan went on to refine his craft in some of the world’s most respected restaurants, including Eleven Madison Park in New York and Frantzén in Stockholm. These formative experiences shaped his precision, creativity, and commitment to excellence.

Returning to London, he joined Clare Smyth once again at Core, before relocating to Sydney in 2021 to help open Oncore by Clare Smyth. Perched on the 26th floor of Crown Sydney, Oncore showcases Alan’s dedication to sustainability, seasonality, and a natural approach to modern fine dining.
