Born in Sardinia, Chef Alessandro draws constant inspiration from his homeland — an island rich in exceptional seafood and artisanal inland produce, from handmade cheeses to cured meats.

These authentic ingredients, still crafted with passion by small producers, shape his philosophy of using nature at its best and transforming it into artistic expressions of flavour, colour and balance.

Acqua’s restaurants in Phuket and Bangkok are contemporary and elegant, offering a fine dining experience of international calibre. Only the freshest ingredients are used, sourced from outstanding local and global producers, with an ongoing focus on seasonality and product research.
