Fabio Pisani, born in Puglia in 1978, trained in some of Europe’s most renowned restaurants, including Le Grand Véfour in Paris, The Waterside Inn in London and Dal Pescatore in Italy. Alessandro Negrini, also born in 1978 in Caspoggio in northern Italy, gained experience at Hotel Palace in St. Moritz, Gallia Palace in Punta Ala and Domaine de Châteauvieux in Geneva before joining Dal Pescatore.

The two chefs met there and soon formed a strong partnership, united by a shared passion for exceptional ingredients, traditional recipes and creative innovation. They later moved to Il Luogo di Aimo e Nadia in Milan, where they now lead the kitchen and are co-owners alongside Stefania Moroni, representing the restaurant’s third generation.

Together, Negrini and Pisani have earned widespread recognition for their contemporary interpretation of traditional Italian cuisine, defined by meticulous technique, deep respect for ingredients and a refined aesthetic. Their collaboration has brought numerous accolades and positioned them among the leading figures of modern Italian gastronomy.
