Alexandre Mazzia, born in Pointe-Noire, Congo, and later settling in Marseille, discovered his passion for cooking after an inspiring meal at Gérald Passedat’s restaurant. Originally a basketball player, he changed his path to pursue gastronomy, first working as a private chef before establishing himself in Marseille.
In 2014, he opened AM, an intimate 24-seat restaurant in a quiet residential street. His cuisine is a fusion of influences from his African childhood and French culinary tradition, characterized by bold use of spices, smoking, and roasting techniques. Mazzia cooks instinctively, constantly reinventing his menu to create a sensory journey for his guests.
During the pandemic, he adapted by launching a food truck, maintaining a connection with his customers and strengthening his team. His collaboration with Maison Martell further expanded his knowledge of Cognac, complementing his culinary artistry.
