Bio

Born in Santiago, he discovered his passion for cooking at a young age and pursued studies at the École Culinaire Française. His early career included positions at Puerto de Fuy, one of Santiago’s most acclaimed restaurants, and internships in France at Auberge du Cheval Blanc in Lembach.

He later worked alongside Carlos Meyer at Restaurante Europeo and led the culinary department at The Singular Hotel, experiences that shaped his creative and refined approach to cuisine. In 2019, Álvaro founded La Mesa in Vitacura, Santiago, a restaurant that quickly became a culinary landmark for its focus on fresh, seasonal ingredients and its blend of traditional and contemporary techniques. His cuisine reflects territory, memory, and seasonality, offering dishes of depth and authenticity.

Building on his success, Álvaro opened Masal Wine Bar in 2024, followed by Verde Bar in 2025, spaces that celebrate Chilean wine, innovative cocktails, sustainability, and cultural exchange. Recognized nationally and internationally, Álvaro continues to inspire through his dedication to creativity, community, and sustainable gastronomy.
