Anthony Vasquez was born in Peru on 30th June and trained in gastronomy in Lima, beginning his career as a commis at A Puerta Cerrada Restaurant. In 2010 he joined the cebiche bar at La Mar Lima, later becoming part of the butcher team, where he developed deep expertise in Peruvian marine species and gained recognition for his skill and passion.

Anthony’s talent and dedication quickly earned him respect within the team and among diners. He expanded his experience internationally with a stint at La Mar in San Francisco before returning to Peru to become the brand’s head chef. From there, his career continued to grow as he oversaw the opening and culinary direction of La Mar Buenos Aires, bringing his understanding of Peruvian cuisine to a new audience.

Today, Anthony Vasquez is Head Chef of La Mar Lima and leads the La Mar Latin America culinary team, known for his commitment to authentic flavours, technical precision and the celebration of Peru’s rich coastal ingredients. His work has earned him widespread acclaim and recognition across the region.
