
Italian by origin and Spanish by passion, Antonio is a chef who believes in humility, hard work, and deep respect for nature as the key to great cooking.
He honed his culinary skills under some of Spain’s greatest chefs, beginning in 2007 at the Miramar restaurant with Paco Pérez, his mentor. Antonio’s journey continued with Ferran Adrià at El Bulli, where he learned molecular gastronomy, followed by valuable experience with Eneko Atxa at Azurmendi.
In 2016, at just 30, Antonio became head chef at Paco Pérez’s restaurant. In 2019, he moved to Poland to manage two restaurants: the fine dining ARCO and the more casual Spanish Treinta y Tres, both located on the 33rd floor of Olivia Star in Gdańsk.
During his time at ARCO and Treinta y Tres, Antonio had the opportunity to work alongside world-renowned chefs, including Andoni Luis Aduriz, Diego Guerrero, Nacho Manzano, Joan Roca, and Albert Adrià, enriching his culinary experience and expanding his skills.
