Italian by origin and Spanish by passion, Antonio is a chef who believes that humility, hard work, and a deep respect for nature are the keys to great cooking. He honed his culinary skills under some of Spain’s greatest chefs, beginning in 2007 at the Miramar restaurant with Paco Pérez, his mentor. Antonio’s journey continued with Ferran Adrià at El Bulli, where he explored the world of molecular gastronomy, followed by valuable experience with Eneko Atxa at Azurmendi.
In 2016, at just 30, Antonio became head chef at Paco Pérez’s restaurant and quickly gained notable recognition for his talent and leadership in the kitchen. In 2019, he moved to Poland to manage two restaurants: the fine dining ARCO and the more casual Spanish Treinta y Tres, both located on the 33rd floor of Olivia Star in Gdańsk.
During his time at ARCO and Treinta y Tres, Antonio had the opportunity to collaborate with world-renowned chefs, including Andoni Luis Aduriz, Diego Guerrero, Nacho Manzano, Joan Roca, and Albert Adrià, further enriching his culinary experience and expanding his expertise.
