Raised in California, he originally pursued martial arts before discovering his passion for cooking in his late twenties. Beginning his culinary career as a dishwasher, he worked his way up through discipline, curiosity, and a self-taught approach shaped by a deep fascination with Japanese culture and technique.

Ricketts is the creative force behind several influential dining concepts in Manila, including Mecha Uma, Sensei Sushi, Ooma, and La Chinesca, each reflecting a distinct expression of his style from refined produce-driven cooking to bold, playful interpretations of global flavors. His restaurants have received significant critical acclaim and industry recognition, helping redefine contemporary dining in the Philippines.

More recently, he opened Iai, an intimate sushi and kappo-style restaurant created with his wife and partner Jae Pickrell. Across all his projects, Ricketts’ cuisine is defined by craftsmanship, respect for ingredients, and a constant drive for evolution.
