José Luis “Chele” Gonzalez is the visionary behind Gallery by Chele, Deli by Chele, and Adviche. Originally from Torrelavega, Spain, he trained at Arxanda in Bilbao and refined his craft at renowned restaurants such as Nerua, El Bulli, Arzak, Mugaritz, and El Celler de Can Roca. His culinary philosophy is shaped by a passion for travel and a deep respect for local cultures, flavors, and traditional techniques.
Chele’s journey brought him to the Philippines, where he worked in prestigious kitchens, including Shangri-La Hotels and Sofitel Philippine Plaza Manila. He later established Gallery Vask, earning widespread acclaim for its innovative approach to Filipino cuisine. Known as “The Innovative Chef,” Chele fosters close relationships with growers, producers, and communities, constantly seeking new ingredients and perspectives on food.
At Gallery by Chele, his creativity thrives in the Stvdio Lab, where he collaborates with long-time partner Carlos Villaflor to reimagine the Filipino gastronomic experience.
