Daniel McBurnie is a Danish-British chef, head of LYST, acclaimed for immersive, seasonally inspired menus that highlight Nordic tradition, sustainability, and innovative gastronomy.
Daniel McBurnie, born in 1992 in Egernsund, Denmark, is a Danish chef of British and Danish heritage whose cooking reflects both Nordic tradition and international influence. Raised by a fisherman father and a West Jutland mother, he developed an early respect for nature and produce, values that continue to shape his culinary philosophy.
He trained in leading Danish kitchens, including Restaurant AOC in Copenhagen under Søren Selin, where he refined his technical skills and gained significant professional recognition. McBurnie is now Head Chef of LYST, the gastronomic restaurant located within the striking Fjordenhus building in Vejle, created in collaboration with Studio Other Spaces, Olafur Eliasson and Sebastian Behmann.
At LYST, he designs immersive, ever-changing menus inspired by the surrounding fjord, the seasons and the elements of air, fire, water and earth. His cuisine emphasises local sourcing, sustainability and creativity, often presenting around twenty courses that reflect the day’s natural conditions. Under his leadership, LYST has received major industry accolades for its innovation, artistry and commitment to sustainable gastronomy, attracting international acclaim.
