Dimitrios began his culinary journey at a young age, moving to Germany and working in several prestigious 2- and 3-star restaurants across Germany, The Netherlands, and Switzerland. His passion for food led him to explore restaurants around the world, and during his travels, he visited Borago in Chile, where he eventually became the head of Research 

and Development (R&D). This experience allowed him to deepen his understanding of innovative culinary techniques and local ingredients. After his time at Borago, Dimitrios returned to Europe, where he spent time working at The Alchemist in Copenhagen and Ernst in Berlin. These positions further refined his skills and broadened his perspective on modern 

cuisine. Driven by a desire to create something of his own, Dimitrios eventually moved to Thailand to open his own restaurant. His diverse experience working in top kitchens across the globe has shaped his approach to cooking, blending traditional techniques with contemporary flavors and a focus on sustainability and innovation.
