Originally from Annecy in the French Alps, Florian Favario embarked on his culinary path at just 15 years old. Over the next 25 years, he honed his craft alongside some of the world’s most respected chefs, travelling across continents and refining a style rooted in precision, instinct, and a deep respect for ingredients. After years of enriching experiences abroad, Florian felt a strong pull back to his native mountains. 

Together with his wife Sandrine, he pursued a long-held dream: creating their own Maison de Cuisine. Opened in July 2019, their elegant alpine retreat quickly earned acclaim as one of France’s notable gastronomic destinations. Seamlessly blending contemporary technique with the flavours and spirit of the Savoie region, 

Florian’s cuisine reflects both his global journey and his profound connection to home. Today, his Maison de Cuisine stands as a celebration of craftsmanship, authenticity, and the landscapes that shaped him—an intimate place where guests are invited to experience the essence of French gastronomy at its most personal and refined.
