Gabriela Chamorro is a visionary Nicaraguan chef redefining contemporary Central American cuisine. Inspired by the aromas and traditions of her grandmother’s kitchen, she began her culinary journey as a self-taught cook before refining her skills at the Culinary Institute of Barcelona and further expanding her education at MAD Academy
Her professional experience spans leading international kitchens, where she deepened her technical approach while staying true to her distinctive premium casual style.
Over the past seven years, Gabriela has dedicated herself to reimagining traditional recipes from across Central America, including Nicaragua, Costa Rica, Guatemala, and Panama. Her cuisine is deeply influenced by her heritage and global travels during her years with Emirates Airlines, with a particular affection for street food culture worldwide.
Based in the UAE for over 16 years, she founded the acclaimed Girl & the Goose Supper Club in 2019, bringing Central American cuisine to Dubai’s underground dining scene. In 2025, she opened Girl & the Goose – Restaurante Centroamericano, the UAE’s first restaurant dedicated to the diverse flavors of Mesoamerica. Her work has earned widespread industry recognition for originality, cultural storytelling, and culinary innovation.
