Halvar Ellingsen is an award-winning Norwegian chef celebrated for his uncompromising commitment to sustainability, local ingredients, and honest culinary expression. Guided by the belief that food must communicate meaning — from craftsmanship to tradition — he champions a no-waste philosophy and a deep respect for nature. After honing his skills in some of Oslo’s most respected kitchens, including Bagatelle, Arakataka, Ylajali, and the 

famed Palace Grill, Halvar returned home to Vesterålen to open Kvitnes Gård in 2020. His work has earned numerous accolades, including International Chef of the Year 2025 by Identità Golose, as well as national awards such as Matprisen and Head Chef of the Year. At Kvitnes Gård, Halvar has created a pioneering model of circular food production, seamlessly 

integrating restaurant, farm, and guesthouse. Every ingredient is sourced from north of the Arctic Circle, with most grown or raised directly on the farm, complemented by wild herbs and mushrooms gathered from the surrounding landscape. Kvitnes Gård has received multiple honors for both sustainability and gastronomic excellence and was named Norway’s Restaurant of the Year in 2025.
