By looking at these travels with a fresh perspective, Hans captures the essence of eachjourney into a menu that guides guests into an engaging tour of history – a narrative takingplace since 2020, first with ‘Discovering Portugal’, a journey from north to south, followed by ‘On the Route of the Islands’, a hop from the mainland to the islands of the Azores, Madeira and São Tomé; in 2022, he took on an expedition to India to explore the flavours of Goa and their Portuguese influence, and in 2023 he would venture to Brazil in search of the most distinctive flavours left by the Portuguese people.
