Hrvoje Kroflin, head chef and co-owner of ManO2 in Zagreb, is one of the leading figures of the new generation of Croatian chefs.
Known for combining local and seasonal ingredients with contemporary techniques, he builds his cuisine on simplicity, precision, and deep respect for the product—an approach that has earned him a reputation for exceptional consistency and talent.
Kroflin began his culinary path at just sixteen at the Zagreb restaurant Gallo, and by nineteen he was already leading the kitchen at Mano in the Glyptotheque, making him one of the youngest chefs in Croatia to hold such a position. Today, he continues to shape modern Croatian gastronomy at ManO2, where every dish reflects refined craftsmanship and a distinctive culinary identity.
His experience abroad in renowned European restaurants helped form his vision and reinforced his commitment to a contemporary cuisine deeply rooted in local terroir. Dedicated to seasonality, he collaborates closely with small producers, fishermen, foragers, and farmers.
Kroflin has been recognized internationally and at home, earning distinctions such as Chef of the Year, while ManO2 has been awarded Restaurant of the Year by major Croatian culinary institutions.
