István Pesti, chef of Platán Gourmet Restaurant in Tata, is dedicated to showcasing and evolving Hungarian cuisine. Born in Budapest, he combines the simplicity and depth of traditional Hungarian flavours with the freshness and techniques of Asian cuisine, creating a distinctive fusion that honours both traditions. Nearly a decade ago, István moved to the countryside with the aim of proving that high-level gastronomy could flourish outside the 

capital. As head chef of notable establishments such as Babel and Cosmo, he left a lasting mark, earning critical acclaim for Tanti just six months after its opening. His greatest achievement came with Platán Gourmet, which has been recognised with two stars for its culinary excellence. The restaurant is part of the Platán complex, which also includes the 

highly regarded Platán Bistro and the recently awarded Platán Hotel. A firm believer in teamwork, István values collaboration within his culinary family. Actively involved in international initiatives, he both shares his expertise and draws inspiration from global culinary exchanges, further strengthening Hungary’s reputation in the international gastronomic scene.
