Jaime Pesaque is a leading Peruvian chef and the founder of Jaime Pesaque Restaurants, known for his modern interpretation of Peruvian cuisine. He trained at Le Cordon Bleu and earned a master’s degree from the Italian Culinary Institute, later refining his skills in some of Europe’s most influential kitchens before returning to Peru. Back home, he led his first kitchen at Al Grano, gaining valuable experience before launching his own projects.
In 2008, Pesaque opened Mayta in Lima, his flagship restaurant, where he combines contemporary techniques with a deep respect for native Peruvian ingredients. The restaurant has received significant international acclaim and prestigious accolades, establishing itself as a key reference point for modern Peruvian gastronomy.
Beyond Mayta, Pesaque has developed a diverse portfolio of restaurants in Lima, including 500 Grados, Sapiens and Mad Burger, while also expanding Peruvian cuisine internationally to destinations such as the United States, Italy and the Netherlands.
