Jeferson García is a Colombian chef and the founding force behind Afluente, a restaurant in Bogotá inspired by the ecological and hydrological richness of Colombia’s páramos. Trained at SENA, he has spent more than a decade working in some of the world’s most innovative kitchens, including Boragó, 99 and 040 in Chile, Santa Teresita in Uruguay, and Central in Peru,
as well as renowned restaurants in Europe and Asia such as Gaggan and GA in Thailand, and Amass, Jordnær, Alchemistes, Kadeau and Relae in Denmark. His work centres on elevating Colombia’s native ecosystems. Through Afluente, he explores the relationship between water,
farmers and indigenous ingredients, creating a menu that narrates the landscapes of the Andes, the páramos and their delicate biodiversity. García has earned significant recognition in key gastronomic forums, including San Sebastián Gastronomika, where in 2025 he was named among the 30 most influential chefs.
