Zhang Jian has been committed to becoming a chef since childhood. Despite his family’s initial objections, he chose to study culinary arts at college, driven by a deep passion for gastronomy. After graduating, he entered the world of fine dining at Hotel Éclat Beijing, where he was first exposed to the contrasting systems of Western and Chinese cuisine. There, he developed a strong appreciation for precision, discipline and the importance of detail in cooking.
Seeking to deepen his understanding of Chinese culinary traditions, Zhang Jian later immersed himself in Sichuan cuisine at The Bridge, working under the guidance of Chef Andre. Through this experience, he refined both classical techniques and contemporary approaches, learning to respect the limitless potential of ingredients and cultivating a profound reverence for the craft.
In 2025, Zhang Jian joined Obscura in Shanghai, a restaurant recognised with prestigious national and international accolades. His vision of “new Chinese cuisine” is not about fusion or breaking with tradition, but about expressing the cultural essence of Chinese food through a modern language and aesthetic. At Obscura, he continues to explore what it truly means for Chinese cuisine to be authentically itself.
