Chef Joseph Lidgerwood, originally from Tasmania, Australia, has built a culinary career defined by curiosity, innovation, and a global perspective. After training and gaining experience in London and the United States, he travelled extensively, exploring kitchens and local food cultures across more than 20 countries. In 2018, he settled in Seoul, drawn by Korea’s rich culinary heritage and unique ingredients, and founded EVETT in Gangnam.
At EVETT, Joseph combines meticulous technique with adventurous creativity, working with ingredients ranging from moon snails to sea cucumber, and transforming them into dishes that tell stories of place, culture, and flavour. Known for his collaborative approach, he encourages his team to share the narrative of each plate directly with diners, turning every meal into an immersive experience.
Beyond the restaurant, Joseph’s mission is to showcase the depth and diversity of Korean ingredients to the world, bridging cultural divides through food.
