Chef Luka Košir, head of restaurant Grič, is a leading figure in Slovenia’s modern culinary scene, known for his innovative approach to sustainable, local cuisine. His journey began in his family’s restaurant in the picturesque village of Šentjošt pri Horjulu and continued in esteemed Slovenian kitchens such as JB Restaurant and Harfa in Ljubljana. In 2009, he took over Grič, shaping its identity with inspiration from Nordic cuisine, a focus on seasonality, and traditional food-preservation techniques.
Luka’s cuisine is deeply rooted in nature, with ingredients sourced from his own garden, eco-certified duck farm, surrounding forests, streams, and meadows. He works closely with local suppliers, hunters, and Adriatic fishermen, creating unique flavor combinations that honor Slovenia’s diverse landscapes.
His dedication to sustainability and culinary excellence earned Grič a Michelin star in 2021, along with the prestigious Michelin Green Star and Slovenia Green Cuisine awards. As part of JRE Slovenia, Luka continues to redefine Slovenian gastronomy, blending tradition with modernity in a way that is both innovative and deeply respectful of the land.
