Mark Birchall is the acclaimed chef-owner of Moor Hall Restaurant with Rooms, which he opened in March 2017 in Lancashire. Moor Hall is celebrated for its delicate, produce-driven menus, drawing inspiration from its exceptional surroundings and home-grown ingredients. Within six months of opening, Moor Hall earned significant industry recognition and continued to accumulate awards, including five AA rosettes and World Class status in the Good Food Guide. 

It has consistently ranked among the UK’s top restaurants, placing second in the National Restaurant Awards 2025, after previously holding top positions for four consecutive years. Mark Birchall has been honoured with multiple accolades for his culinary excellence, including ‘Best Chef in the UK’ at the AA Hospitality Awards 2022, ‘Chef of the Year’ at the National Restaurant Awards 2025, and the ‘Chef Award’ at The Cateys.

In 2017, he also opened The Barn at Moor Hall, a neighbourhood restaurant currently holding three AA rosettes. Before founding Moor Hall, Mark spent over two decades refining his craft in top kitchens across England and abroad, including a formative period at El Celler de Can Roca in Girona. A native of Chorley, Lancashire, he trained at Runshaw College and was awarded the Roux Scholarship in 2011.
