Mateo Ríos
X.O. was born in 2020 from the creative vision of executive chefs Rob Pevitts, Mateo Ríos and Sebastián Marín, a collective dedicated to exploring Colombia’s biodiversity through research, innovation and deep collaboration with local producers. Their work highlights the complexity of the country’s food chain and directly supports the farmers, artisanal fishers and communities who shape Colombia’s culinary identity.
In 2023, just two years after opening, X.O. earned significant regional acclaim, ranking among Latin America’s top restaurants for the second consecutive year. These achievements strengthened Medellín’s rising status as a leading gastronomic destination. In 2025, Sebastián received a prestigious Knife Award from The Best Chef, recognising his growing influence on the international stage.
Born in Medellín, Mateo completed his culinary studies in Colombia and Argentina before joining the Carmen Family in 2010. Today, he co-leads the kitchen at X.O., working alongside Sebastián and Daniela. His passion for aquaculture and coastal products has driven the development of advanced ageing and cooking techniques with the Bio-Lab team, further defining X.O.’s innovative and ingredient-driven approach.
Sebastián Marín
Through extensive exploration and research into Colombia’s gastronomic landscape, the X.O. team has developed a deep respect for the nation’s production chain, directly supporting the farmers, fishers and artisans who work closely with their families and communities.

Born in Medellín, Sebastián studied culinary arts in 2010 and completed his internship at Carmen Restaurante. He believes in fostering direct relationships with producers, building a community of trusted partners whose traditions and craft shape the group’s culinary identity. He also leads the creative development of Colombian-inspired sweets that connect heritage with innovation.
In 2020, Sebastián and executive chef Mateo Ríos created X.O., a concept rooted in Colombian products and shaped by the diverse producers, artisanal fishers and farmers who form the heart of the restaurant’s vision.
