Matias Perdomo is a Uruguayan chef based in Milan, known for creative contemporary cuisine, blending Italian tradition global influences, founder of Contraste, recognised for bold technique-driven dishes.
Matias Perdomo, born in Uruguay in 1980, discovered his passion for cooking through a private course with his uncle. By the age of 14, he had already set his first ambitious goal: to become the chef of El Conrad, the first five-star hotel in his country. His journey began in a small Chilean rotisserie before moving on to work in Nora Rey’s French-style catering business.
He later joined Paninis, an Italian restaurant owned by Guillermo Bazzan, where he played a key role in transforming it into a successful chain with three locations across Uruguay. In 2001, Perdomo moved to Milan, joining Al Pont de Ferr, a historic restaurant on the Navigli owned by Maida Mercuri. He immersed himself in Italian culinary traditions, becoming head chef in 2005.
He also trained in Spain, completing stages at renowned restaurants like Berasategui in San Sebastian and El Celler de Can Roca in Girona. In 2015, he founded Contraste in Milan with partners Simon Press and Thomas Piras, further defining his innovative and creative approach to contemporary cuisine.
