Mikael Svensson was born and raised in Skåne, Sweden’s southernmost county, where a childhood shaped by nature, farming and fishing instilled in him a deep respect for how landscapes sustain communities. Initially devoted to ice hockey, he discovered his culinary calling at 16 while working in a hotel kitchen in Kristianstad, later training professionally and moving to Oslo in 2003 to join Le Canard, where he rose to Junior Sous Chef.

His career took him through leading kitchens in Scandinavia and Spain, including formative periods in Oslo, Gothenburg and San Sebastián, before returning to Norway to lead Restaurant Eik. In 2013, he founded Kontrast, built on organic, locally sourced and foraged produce. Relocated to the sustainable Vulkan district in 2015, Kontrast earned major international accolades, including top culinary distinctions and a prestigious sustainability award recognising its environmental commitment.

In 2020, he co-founded b.culture, transforming organic by-products into premium fermented goods. For Svensson, gastronomy is inseparable from responsibility, proving that culinary excellence and sustainability can thrive together.
