Growing up in the Puglian countryside, Mirko Febbrile discovered his passion for cooking early, often preparing meals for himself and his brother while their parents worked. Limited ingredients only fuelled his creativity, shaping the resourcefulness that defines him today. After working his way through university at McDonald’s, he moved to Singapore in 2015, where he quickly rose through the culinary world and assumed his first head chef role within a year.
A firm believer that modern luxury lies in simplicity, comfort and genuine hospitality, Febbrile champions an inclusive, supportive kitchen culture. He advocates for food responsibility and sees chefs as powerful drivers of cultural change. After leaving Braci, he travelled across Europe to deepen his craft before returning to Singapore to launch a wildly popular hawker pop-up celebrating Italian food made accessible to all.
In 2023, he opened Fico, a heartfelt tribute to Puglia and its cucina povera traditions, earning widespread acclaim and a devoted following. In 2024, he debuted Somma, his most ambitious project yet, which received multiple accolades, including Tatler’s Best New Restaurant 2024, Straits Times’ Best High-End Restaurant 2024 and recognition on the Condé Nast Traveler 2025 Hot List.
