Pérez’s journey began in Llançà, a small fishing town on the Costa Brava near the Spanish-French border, where he and his wife, Montse Serra, run Miramar. Originally a seaside hostel built by Montse’s family, the establishment has transformed into a culinary landmark. Paco’s passion for cooking ignited at the age of 12 in his parents’ bar, and his Mediterranean roots were later enriched by the French Nouvelle cuisine and the groundbreaking influence of El Bulli and Ferran Adrià.

In Miramar’s kitchen, Paco Pérez blends avant-garde techniques with a deep respect for tradition, crafting dishes that celebrate the sea and its sublime products.
