In 1991, he joined the Casino de Madrid, where he later became head chef and revolutionized its culinary offerings.

At the NH Collection Casino de Madrid, Roncero leads both his flagship restaurant and a catering service, emphasizing quality and accessibility. His cuisine reflects a fusion of tradition and modernity, drawing on his travels, childhood memories, and Spanish culinary heritage.
