Born and raised in Tórshavn, Faroe Islands, Poul Andrias Ziska (b. 1990) discovered his passion for cooking at an early age, starting in a local pizzeria. He trained professionally in Denmark, including at Geranium in Copenhagen, and gained experience at Mugaritz in Spain. Early mentor Leif Sørensen helped shape his approach to blending tradition with innovation.
In 2014, Ziska returned to the Faroe Islands to lead KOKS, transforming it into an internationally recognized destination for Faroese cuisine, earning prestigious awards and recognition for his creativity and vision. Drawing inspiration from local ingredients and traditional techniques such as fermentation, curing, and pickling, he highlighted the islands’ culinary heritage while pushing modern boundaries.
In 2025, he opened his own restaurant, PAZ, in central Tórshavn, focusing on sustainability, storytelling through food, and collaboration with local producers. Within months, PAZ earned major accolades for its exceptional cuisine, establishing Ziska as a leading voice in Nordic gastronomy. His work continues to celebrate Faroese culture, blending deep tradition with contemporary culinary artistry.
