Chef Prin Polsuk is a pioneering Thai chef dedicated to preserving and reinterpreting the rich culinary heritage of Thailand. Born into a farming family in northern Thailand, he developed a deep appreciation for regional ingredients and traditional cooking techniques from an early age. Prin began his career at the Mandarin Oriental Bangkok before joining David Thompson at Nahm in London and later Bangkok, where he refined his skills and deepened his understanding of authentic Thai cuisine. 

In 2017, Prin and his partner Mint Jarukittikun co-founded Samrub Samrub Thai, an educational and dining platform that revives forgotten recipes and highlights Thailand’s diverse regional flavours. His work has earned international recognition, positioning Samrub Samrub Thai among Asia’s most innovative dining destinations. 

He also co-owns Vilas in Bangkok, where he combines classical Thai ingredients with global influences, creating seasonal menus that celebrate the country’s culinary richness. Known for his meticulous technique, cultural storytelling, and commitment to local communities, Prin Polsuk continues to elevate Thai gastronomy on both a national and international stage.
