Ricardo Chaneton, a native of Venezuela, originally planned a career in medicine before a summer job in a restaurant changed his path. His culinary journey began at Le Gourmet at the InterContinental Tamanaco in Caracas, while a formative trip to Europe opened the doors to fine dining.
He gained experience in some of Spain’s most renowned kitchens before, in 2010, joining Mirazur, where he spent seven years working alongside Mauro Colagreco and rose to the role of chef de cuisine. This period shaped his deep respect for seasonality, product integrity and the precision of French gastronomy.
In 2016, Chaneton moved to Hong Kong to lead the kitchen at Petrus, earning widespread critical acclaim. He later opened MONO, where he combines Latin American traditions with refined French techniques to create a distinctive modern tasting menu. His cuisine reflects heritage, history and passion, celebrating Latin America’s rich culinary identity. MONO has received numerous prestigious accolades, establishing itself as a restaurant defined by warmth, generosity and a deeply personal vision of contemporary fine dining.
