Richard Ekkebus is the Culinary Director at The Landmark Mandarin Oriental, Hong Kong, where he oversees all dining concepts at one of the city’s most distinguished luxury hotels. Under his leadership, Amber, the hotel’s flagship restaurant, has become a benchmark for innovation, sustainability, and refined contemporary cuisine rooted in classical French technique.

Originally from the Netherlands, Richard began his career apprenticing under highly acclaimed European chefs before further refining his craft in France with culinary icons such as Pierre Gagnaire, Alain Passard, and Guy Savoy. His international journey also includes Executive Chef roles in Mauritius and Barbados, experiences that broadened his global perspective. Since joining The Landmark Mandarin Oriental in 2005, Richard has consistently pushed creative boundaries. A major transformation of Amber in 2018 marked a new culinary direction focused on purity of flavour, ethical sourcing, and environmental responsibility.
