Ryan Cole, born in 1989 in Cape Town, grew up in a fishing family, developing a deep connection to seafood and the sea. His passion for cooking began in high school and led him to train at the South African Chefs Academy. Early professional experience in London included roles at Launceston Place, The Square, and La Trompette, before returning to South Africa to work at Pierneef à La Motte and The Test Kitchen.

In 2018, Cole opened Salsify at The Roundhouse, taking full ownership in 2020. His cuisine blends classical techniques with modern creativity, emphasizing seasonal, sustainable, and ethically sourced ingredients. Cole’s seafood-focused dishes often draw on ingredients personally caught or sourced from local suppliers, reflecting his heritage and respect for nature.

Recognized for his culinary excellence, Cole was awarded the Eat Out Woolworths Financial Services Chef of the Year in 2023. In 2024, he expanded with COY Restaurant at Cape Town’s waterfront, continuing his signature sea-to-table approach while celebrating Southern African flavors.
