Born in 1988 in Abruzzo, chef Sarah Cicolini is one of the most important personalities
in reinventing the Italian cuisine. Her place SantoPalato in Rome is a contemporary
trattoria where traditional dishes, such as the carbonara or the oxtail meatball, shine
again thanks to a meticulous research on ingredients and new techniques, paired with
the greatest natural wines from Italy and Europe. In May 2023 Sarah also opened
Avanvera, a wine bar where her food philosophy expresses in funky dishes and small
bites that perfectly pair with incredibile natural wines.
