When Shinobu Namae left home for Japan’s prestigious Keio University to study the politics of developing nations, his future seemed all but guaranteed. But fate had other plans—and they came in the form of onions. Looking to make some extra money, Namae took a part-time job at a pasta restaurant near campus. What began as dishwashing quickly turned into hours of chopping onions and garlic. 

It was repetitive, yet something clicked. For the first time, he felt drawn to the kitchen—more intrigued by the rhythm of prep work than any political theory lecture. He dreamed of cooking Italian food and escaping the rigidity of Japanese life. But with no connections and no clear path, he started wherever he could—first in Tokyo, then briefly in New York. There, a visit to a cookbook store changed everything. 

A single book by Michel Bras opened his eyes to the beauty and simplicity of French cuisine. That moment led him to a new path—working with Bras in Japan, and later, with Heston Blumenthal in the UK. From humble beginnings, Namae carved a journey shaped by curiosity, discipline, and a deep love for honest cooking.
