Inspired by the Scandinavian Law of Jante, the restaurant embraces a philosophy of modesty and authenticity. The semicircular pavilion with floor-to-ceiling windows offers a warm, minimalist setting, where chefs personally present their creations and service remains relaxed yet impeccably professional under the guidance of sommelier and host Mona Schrader.

Born in 1989 in Grimma, Tony Hohlfeld trained at the Maritim Airport Hotel Hannover before continuing his journey at Berlin’s Adlon and Ole Deele in Burgwedel. Opening Jante in 2015 with his partner Mona, he quickly earned widespread recognition for his precise craftsmanship, inventive ideas, and an approach that balances boldness with finesse.

Jante’s cuisine focuses on regional and seasonal products: freshwater fish, prawns from local farms, forest aromatics, and herbs sourced from nearby landscapes. The dishes reveal complexity with lightness—floral notes, refined compositions, and flavours that, as Hohlfeld describes, “must have pressure” and leave a deep sense of satisfaction.

Mona Schrader has played an equally pivotal role, setting new standards in Hannover with her passionate guidance, expert wine selections, and innovative non-alcoholic pairings that continue to shape the city’s culinary scene.
