Willem Hiele grew up in a family of fishermen between Ostend and Koksijde, where his bond with the sea was formed early on. A passionate surfer and traveller, he spent years exploring coastlines around the world, living nomadically along the Spanish coast and journeying through New Zealand, Indonesia, and South Africa. These experiences deeply shaped his worldview and his approach to cooking.

Originally trained as a baker and pastry chef, Hiele is largely self-taught in the kitchen. He later opened his own restaurant near the Belgian coast, where he developed a highly personal, terroir-driven cuisine centred on seafood, fermentation, fire, and seasonal coastal produce. His style is instinctive and expressive, balancing raw intensity with restraint and simplicity.

Hiele’s work has earned him significant national and international recognition, positioning him as one of Belgium’s most distinctive culinary voices. His cuisine reflects a profound respect for nature, craftsmanship, and time, translating the rhythms of the sea and landscape into bold, elemental dishes that feel both ancient and contemporary.
