Witek Iwański, Chef and Owner of hub.praga, creates a cuisine grounded in sustainability and the responsible use of nature’s resources. For him, fine dining is not about spectacle, but about fostering a dialogue between people and the land. His menu is concise, seasonal, and guided by the rhythm of nature, with every choice made to serve flavour, community, and the environment. Simplicity, authenticity, and craftsmanship lie at the heart of his cooking.
Iwański refined his skills in several of Europe’s most respected kitchens, including Maaemo, Frantzén, and Azurmendi, where he learned that true excellence comes from collaboration and intention. His talent has earned him significant national recognition, including two victories in the Culinary Cup of Poland, a Chef of the Year title, and the honour of serving as Poland’s sole brand ambassador for Gaggenau.
In recent years, hub.praga has been celebrated for its distinctive approach to locality and responsibility, and Iwański himself has been acknowledged internationally, including receiving the One Knife Excellent distinction from The Best Chefs.
