Xu’s dedication led him to partner with Yao Min, with whom he shared a vision of opening a private kitchen focused on authentic Cantonese flavors. This collaboration led to the creation of 102 House.
While initially exploring modern Cantonese cuisine, Xu was inspired by his travels in Japan, particularly by the concept of kaiseki, which emphasizes seasonality and the art of balancing flavors.
