
Mauro Uliassi is an Italian chef known for his innovative approach to seafood cuisine at his restaurant, Uliassi, in Senigallia.
Born in 1958, he grew up in a family that owned a bar, where he developed a deep appreciation for hospitality. Initially enrolling in a technical institute, he later shifted to hotel management school, eventually returning as a professor.
His early career included summers as a bartender on the Riviera Romagnola and time in France, where he worked at Fauchon in Paris and met his wife, Chantal. In 1990, he opened Uliassi, transforming it from a humble seafood eatery into a culinary landmark. Inspired by a visit to ElBulli in 1998, he embraced avant-garde techniques while maintaining a connection to traditional flavors.
Uliassi’s success is built on relentless experimentation, with an annual 40-day research Lab where his team refines new dishes. His commitment to excellence extends beyond food, fostering a balanced work environment and a loyal team. Uliassi remains dedicated to his craft, focusing entirely on his flagship restaurant rather than expanding elsewhere.
