René Redzepi was the founder, head chef, and co-owner of Noma. He’s no longer part of the project and has left the company.
Previously, he founded the Nordic Food Lab, a non-profit research institution dedicated to exploring the building blocks of Nordic cuisine through both traditional and modern gastronomies. Additionally, Redzepi is the founder of MAD, a non-profit organization that aims to build a global community of cooks, purveyors, thinkers, and food enthusiasts, united by a passion for food and a desire to improve the culinary world.
Redzepi has authored several books, including Noma: Time and Place in Nordic Cuisine, A Work in Progress, Foundations of Flavor: The Noma Guide to Fermentation, and Noma 2.0: Vegetable, Forest, Ocean. He is married to Nadine Levy Redzepi, and together they have three daughters: Arwen, Genta, and Ro. Redzepi’s work has been pivotal in reshaping the global food scene, emphasizing sustainability, innovation, and a deep connection to local ingredients and traditions.
