Heiko Nieder, born in 1972 in Germany, is a renowned chef known for his creative, precise and innovative approach to fine dining. He began his culinary career at the Fairmont Hotel Vier Jahreszeiten in Hamburg and went on to refine his skills in respected kitchens across Germany, including Restaurant Le Canard in Hamburg, Hotel Zur Traube in Grevenbroich and Restaurant Vau in Berlin. He later spent five years leading L’Orquivit in Bonn, where his inventive cuisine brought him early professional recognition and marked him as a rising talent.
In 2008, Nieder joined The Restaurant at The Dolder Grand in Zurich as Chef Fine Dining. Under his leadership, the restaurant rapidly gained international acclaim and numerous top-tier accolades, establishing itself among Europe’s leading dining destinations. His work has been consistently praised for its originality, technical excellence and expressive flavours.
Since 2021, Nieder has served as Culinary Director at The Dolder Grand, overseeing the hotel’s entire gastronomic vision. In 2023, he published his first cookbook, Heiko Nieder – The Restaurant, further cementing his reputation as one of the most influential chefs of his generation.
