Bio

Viki Geunes (b. 1972) is a self-taught chef who has reached the culinary pinnacle through natural talent and dedication. Initially trained in industrial sciences, he chose to pursue gastronomy independently, honing his craft through self-study and relentless discipline. In 1996, he and his wife, Viviane Plaquet, opened the restaurant ‘t Zilte in Mol, where she welcomed guests with the same dedication that has defined their partnership.

Initially favoring a simple, tasteful approach, Geunes soon became known for his interest in innovative techniques. A move to a new location in 2000 allowed his creative style to flourish, marked by bold flavors, contrasts in temperature and texture, and a personal, inventive touch. In 2004, he earned his first Michelin star, followed by a second in 2008, cementing his reputation as one of Belgium’s top chefs.

In 2011, Geunes relocated ‘t Zilte to the ninth floor of Antwerp’s MAS (Museum aan de Stroom), offering guests a panoramic city view alongside his refined cuisine. Renamed „Zilte” in 2020, the restaurant underwent a modern transformation, reflecting his commitment to precision and innovation. Today, Geunes continues to push culinary boundaries while maintaining a warm family spirit in his renowned establishment.
