Catalina Vélez is a leading authority on Colombia’s ingredients, traditions, and ancestral cooking techniques. As a chef and researcher, she focuses on indigenous products, organic agriculture, restoring the value of farmers, ethical consumption, and functional nutrition aimed at nourishing the body, mind, and soul. With a background in business administration, Catalina trained at the Atlanta Art Institute and earned certification from Le Cordon Bleu in Paris.

Catalina has been an active volunteer with the VallenPaz corporation, advocating for communities affected by Colombia’s armed conflict.
